diced new potatoes
olive oil
garlic cheddar cheese
green onions
parsley
sliced grape tomatos
bay leaves
whole cumin
salt
pepper

stuff i would have used if they were available:
garlic
coriander

blanch or preboil potatoes to some point before done (your preference... i prefer them firmer with no mushiness). grind cumin and toast in olive oil in cast iron pan. add potatos, bay leaves, salt, and pepper and cook until almost desired level of crispiness. add green onions and cook a little more. add tomatos and cheese and cook until cheese is melted and tomatos are warm. toss in fresh parsley.

i did not have any garlicks, but the garlic cheddar cheese worked wonders. coriander would have been very nice. potatoes usually need a lot of salt, so i use a lot.
